Apples and Raisins

 

STIR FRIED APPLES WITH RUM SOAKED RAISINS



INGREDIENTS METHOD
  • 6 Cape Golden Delicious apples, peeled, cored and each sliced into 8 wedges
  • 75g (3oz) raisins
  • 4 x 15ml (4 x tbsp) rum
  • 1 x 15ml (1 tbsp) vegetable oil
  • 25g (1oz) unsalted butter
  • 2 x 15ml (2 tbsp) brown sugar

  • Put the raisins in a small container with the rum, cover with food wrap and leave for at least 2 hours but preferably overnight to marinate (or zap for 1 minute on Full power in the microwave).
  • Heat the oil and butter in a wok or large frying pan and stir-fry the apple wedges over a medium/high heat for 3-4 minutes or until beginning to soften.
  • Add the sugar and continue to stir-fry until the apple slices begin to caramalise slightly, then add the raisins and rum and stir fry for 1 minute.
  • Serve immediately with Greek yoghurt.
