ASPARAGUS IN PHYSALIS
SAUCE

- 4 cups asparagus
spears
- 1 tsp. salt
- 1 tsp. black
pepper
- 2 cups physalis,
peeled
- 3 cups water
- 1 tbsp. white
sugar
- 1 tbsp. cornstarch

- Steam asparagus
spears for 10 minutes until tender.
- Meanwhile,
put salt, black pepper, physalis, water and sugar in a pan.
- Bring to
a boil and cook for 10 minutes until water has reduced and fruit
is soft.
- Using a food
processor, puree physalis and water mixture.
- Add cornstarch
and blend until smooth.
- Serve asparagus
hot, smothered in the physalis sauce.
