ASPARAGUS IN PHYSALIS SAUCE

INGREDIENTS: METHOD:
  • 4 cups asparagus spears
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 2 cups physalis, peeled
  • 3 cups water
  • 1 tbsp. white sugar
  • 1 tbsp. cornstarch

  • Steam asparagus spears for 10 minutes until tender.
  • Meanwhile, put salt, black pepper, physalis, water and sugar in a pan.
  • Bring to a boil and cook for 10 minutes until water has reduced and fruit is soft.
  • Using a food processor, puree physalis and water mixture.
  • Add cornstarch and blend until smooth.
  • Serve asparagus hot, smothered in the physalis sauce.
