AVOCADO AND TOMATO SALAD


INGREDIENTS: METHOD:
  • 2 ripe avocados, peeled, pitted and diced
  • 2 tsp. lemon juice
  • 3 medium tomatoes, seeded and diced
  • ¼ cup diced sweet onion
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • Salt and pepper to taste
  • Combine avocados, lemon juice, tomatoes, onion, and parsley in a bowl and toss.
  • Combine oil, vinegar and salt and pepper and shake.
  • Pour over avocado mixture and chill until ready to serve.
