- 2 ripe avocados,
peeled, pitted and diced
- 2 tsp. lemon
juice
- 3 medium
tomatoes, seeded and diced
- ¼
cup diced sweet onion
- ¼
cup fresh parsley, chopped
- ¼
cup olive oil
- ¼
cup red wine vinegar
- Salt and
pepper to taste

- Combine avocados,
lemon juice, tomatoes, onion, and parsley in a bowl and toss.
- Combine
oil, vinegar and salt and pepper and shake.
- Pour over
avocado mixture and chill until ready to serve.
