YEARS BLACK EYED PEAS

tbsp. olive oil
- 1
½ cups chopped onion
- 1
½ cups chopped celery
- 3
x16 oz. cans black-eyed peas
- 1
x16 oz. can chopped tomatoes
- ¼
to ½ cup real bacon bits
- 1
clove garlic minced
- Salt
and Pepper to taste

- Saute
onion and celery until tender.
- Combine
with black-eyed peas, tomatoes, bacon bits, garlic, salt and pepper
in baking dish.

Bake for 30 minutes at 325 degrees

After
all that Christmas and New Year eating here is a simple and delicious
dish that is just a lttle bit different. In fact an excellent dish at
any time of year.
