NEW YEARS BLACK EYED PEAS

INGREDIENTS: METHOD:
  • 1 tbsp. olive oil
  • 1 ½ cups chopped onion
  • 1 ½ cups chopped celery
  • 3 x16 oz. cans black-eyed peas
  • 1 x16 oz. can chopped tomatoes
  • ¼ to ½ cup real bacon bits
  • 1 clove garlic minced
  • Salt and Pepper to taste
  • Saute onion and celery until tender.
  • Combine with black-eyed peas, tomatoes, bacon bits, garlic, salt and pepper in baking dish.
  • Bake for 30 minutes at 325 degrees

After all that Christmas and New Year eating here is a simple and delicious dish that is just a lttle bit different. In fact an excellent dish at any time of year.
