- 1 Head Celery
- 1 medium
Onion
- 2 Slices
Bacon (Optional)
- 300ml (½
pint) Vegetable Stock
- 25g (1oz)
Butter
- 1 tsp Chopped
Parsley
- Salt and
Black Pepper

- Pre-heat
the oven to 170°C: 325°F: Gas 3.
- Clean celery,
cut into one-inch pieces and place in a casserole dish.
- Finely chop
bacon, parsley and onion and sprinkle over celery, seasoning to
taste.
- Pour over
the stock.
- Dot with
knobs of butter.
- Cover dish
and bake for 30-45 minutes.
