IRISH BRAISED CELERY

INGREDIENTS: METHOD:
  • 1 Head Celery
  • 1 medium Onion
  • 2 Slices Bacon (Optional)
  • 300ml (½ pint) Vegetable Stock
  • 25g (1oz) Butter
  • 1 tsp Chopped Parsley
  • Salt and Black Pepper

  • Pre-heat the oven to 170°C: 325°F: Gas 3.
  • Clean celery, cut into one-inch pieces and place in a casserole dish.
  • Finely chop bacon, parsley and onion and sprinkle over celery, seasoning to taste.
  • Pour over the stock.
  • Dot with knobs of butter.
  • Cover dish and bake for 30-45 minutes.
