- 8 oz
chestnut mushrooms, wiped
- 3 tblsp
groundnut oil
- 4 spring
onions, chopped
- 2 large
cloves garlic, sliced
- 8 oz
broccoli in bite size pieces
- 2 tblsp
light soy sauce
- 2 tblsp
rice wine or dry sherry

- Cut the
mushrooms into quarters
- Heat
a wok until quite hot then add the oil. Add the spring onions
and cook until they wilt and turn dark green, about a minute.
- Add the
garlic and cook for a minute more.
- Add the
broccoli and stir fry for 2 minutes until a vivid green. Add
the mushrooms and a little more oil if needed.
- Fry for
two minutes then add the soy sauce and rice wine. Stir fry
for 1-2 minutes until the broccoli is tender, season with
pepper and serve hot.
- If you
like you can do this without the broccoli and using 1lb of
mixed mushrooms e.g. chestnut, oyster, shitake
