BROCCOLI AND MUSHROOM STIRFRY

Serves 2

INGREDIENTS METHOD
  • 8 oz chestnut mushrooms, wiped
  • 3 tblsp groundnut oil
  • 4 spring onions, chopped
  • 2 large cloves garlic, sliced
  • 8 oz broccoli in bite size pieces
  • 2 tblsp light soy sauce
  • 2 tblsp rice wine or dry sherry

 

  • Cut the mushrooms into quarters
  • Heat a wok until quite hot then add the oil. Add the spring onions and cook until they wilt and turn dark green, about a minute.
  • Add the garlic and cook for a minute more.
  • Add the broccoli and stir fry for 2 minutes until a vivid green. Add the mushrooms and a little more oil if needed.
  • Fry for two minutes then add the soy sauce and rice wine. Stir fry for 1-2 minutes until the broccoli is tender, season with pepper and serve hot.
  • If you like you can do this without the broccoli and using 1lb of mixed mushrooms e.g. chestnut, oyster, shitake

 


A simple stir-fry to add that  "Oriental"  feel to any meal
