JERSEY ROYALS WITH CHILLI AND LIME

INGREDIENTS: METHOD:
  • 900g (2lb) Jersey Royal Potatoes
  • knob of unsalted butter
  • 1 red chilli pepper, de-seeded and finely chopped
  • grated rind and juice of 1 large lime
  • Bring a large pan of water to the boil.
  • Add potatoes, bring back to the boil, then simmer gently for 12-15 minutes.
  • Drain well. Melt butter in a large frying pan and cook chilli pepper for about 30 seconds.
  • Add grated rind and lime juice, then add potatoes.

To garnish: a sprig of parsley and wedges of lime
