ROYALS WITH CHILLI AND LIME

- 900g (2lb)
Jersey Royal Potatoes
- knob of unsalted
butter
- 1 red chilli
pepper, de-seeded and finely chopped
- grated rind
and juice of 1 large lime

- Bring a large
pan of water to the boil.
- Add potatoes,
bring back to the boil, then simmer gently for 12-15 minutes.
- Drain well.
Melt butter in a large frying pan and cook chilli pepper for about
30 seconds.
- Add grated
rind and lime juice, then add potatoes.

To garnish: a sprig
of parsley and wedges of lime
