NEW POTATO AND LAMB PARCELS

Serves 4

INGREDIENTS:
  • 700 g new potatoes , sliced
  • 55g melted butter
  • 1 large onion . sliced
  • 1 Bramley cooking apple , peeled , cored and sliced
  • 8 tsp mint jelly
  • Salt and freshly ground black pepper  
  • 4 lamb chops

 

 

 

METHOD:
  • Take 4 pieces of foil ( approximately 12 inches square and brush a little melted butter over each piece.
  • Divide the sliced potatoes between them followed by the onion and apple.
  • Season and place a teaspoon of mint jelly on each.
  • Place a lamb chop in each parcel
  • Spread another teaspoon of mint jelly on  top and drip with remaining butter.
  • Seal the parcels well.
  • Place on a baking sheet and cook at 375F/190C/GM5 for 1 hour.
  • Serve with a sprig of rosemary on top
