INGREDIENTS:
- 700 g
new potatoes , sliced
- 55g melted
butter
- 1 large
onion . sliced
- 1 Bramley
cooking apple , peeled , cored and sliced
- 8 tsp
mint jelly
- Salt
and freshly ground black pepper
- 4 lamb
chops

METHOD:
- Take
4 pieces of foil ( approximately 12 inches square and brush
a little melted butter over each piece.
- Divide
the sliced potatoes between them followed by the onion and
apple.
- Season
and place a teaspoon of mint jelly on each.
- Place
a lamb chop in each parcel
- Spread
another teaspoon of mint jelly on top and drip with
remaining butter.
- Seal
the parcels well.
- Place
on a baking sheet and cook at 375F/190C/GM5 for 1 hour.
- Serve
with a sprig of rosemary on top
