MELON
, AVOCADO AND PRAWN SALAD

INGREDIENTS:

small Galia Melon, seeded, skinned and cut into thin strips

Avocados, stoned, peeled and cut into thin strips.

100g
mixed salad leaves, rinsed and dried.

350g
large cooked prawns, peeled.
-
Fresh
coriander sprigs to garnish
DRESSING:
- 1 small
shallot, finely chopped.
- 125
ml reduced fat crème fraîche.
- 2 tbsp
extra virgin olive oil.
- 1 tbsp
cider vinegar.
- a pinch
of salt and pepper.

METHOD:
- For the
dressing mix 4 tbsp extra-virgin olive oil, 3 tbsp best quality
balsamic vinegar, 2 tbsp whole-grain mustard, ½ tbsp snipped
chives, ½ tbsp finely chopped spring onions, salt and
pepper.
- Toss all
of the salad ingredients together.
- Divide
between individual plates and drizzle with the dressing.
- Serve at
once.

This is
a high fibre salad, serving it with whole meal bread will increase
the fibre even more
Melon is
one of the best sources of Vitamin A, essential for healthy
skin and hair.
Although
high in cholesterol, prawns are low in fat and contain B vitamins
