BREAKFAST ORANGE DATE MUFINS

INGREDIENTS METHOD
  • 1 orange with peel, chopped
  • ½ cup orange juice
  • ½ cup chopped dates
  • 1 egg, beaten
  • ½ cup white sugar
  • 1½  cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup sour cream
  • Preheat oven to 350  F (175 C). 
  • Grease muffin cups or line with paper muffin liners.
  • In a large bowl, stir together chopped orange, orange juice, dates and sugar.
  •  In a separate bowl, mix together flour, baking powder, baking soda and salt. Stir flour mixture into orange mixture just until combined. Do not over mix. 
  • Fold in sour cream. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 15 to 20 minutes, until a toothpick inserted into centre of a muffin comes out clean.
  • Remove from pan and let cool before serving.

 

 


A light and tasty morning alternative to a conventional breakfast and ideal in view of what is coming later in the day!. The aromas from the baking will surely compliment the seasonal atmosphere.

Fat free sour cream can be used to lower the fat content. Cinnamon or other spices (cloves, ginger or allspice) can be added for a little more spice.
