INGREDIENTS:
- 4 Kiwi
Fruit or 1 Kiwi Fruit per Pancake
- 125ml
¼ fl. oz. Double /single cream or natural yoghurt.
- 4 oz.
Plain Flour , Pinch of Salt
- 1 Egg
, ½ pint of milk
- 1 tablespoon
of oil.

METHOD:
Basic Pancake Mix
- Sift
flour and salt together , beat the milk and egg together.
- Add the
beaten milk and egg gradually , add the oil to the pan just
before using the batter.
- Heat
a lightly greased frying pan , pour or spoon a little of the
batter mix into the pan , tilt this immediately , so that
the batter coats the base.
- Cook
for one to two minutes , turn and cook the other side.
- Peel
and finely slice the Kiwi Fruit.
- Open
the pancake and place the slice s of Kiwi fruit on two thirds
of it.
- Make
a pleat in the pancake and fold the empty side over to form
the crown.
