RECIPE FROM THE COOK ISLANDS

| INGREDIENTS

METHOD
|
- 2 cups
pawpaw fruit
- 1 cup
arrowroot powder
- 1 dssp
sugar
- 1 cup
coconut cream
|
- Peel
ripe pawpaw and remove seeds.
- Wash
and cut in small pieces - boil until tender, then mash. Strain
juice, leave to cool.
- Mix in
arrowroot powder and sugar if required.
- Bake
for 1½ - 2 hours. ( 400°F - no cover on dish.)
- When
cooked cut up in small pieces.
- Add sugar
to the coconut cream and pour over poke.
- Unsweetened
condensed milk can be used if you have no coconut cream. Add
sugar to milk in same way.

Pumpkin,
bananas and other fruits can be cooked in the same way.
