INGREDIENTS:
- ripe avocado
pears.
- 1 small
melon , balled or cubed
- 2 oranges
- 4 rashes
back bacon , cooked until crisp and chopped
- 4 spring
onions , chopped
- 2 tbsp
chopped chives
- 50g/2oz
roasted cashew nuts
- freshly
ground black pepper
For the dressing:
- 3 tbsp
olive oil
- 2 tbsp
orange juice
- 2 cloves
garlic , peeled and crushed

METHOD:
- Halve avocados
and remove stone and skin from each.
- Cut flesh
into cubes and mix with melon balls.
- Remove
peel and pith from both oranges and divide fruit into segments.
- Mix pieces
into avocados and melon and turn mixture into a serving dish.
- Combine
bacon, spring onions, chopped chives and cashew nuts and seasoning
and scatter over salad.
- Put dressing
ingredients into jar, cover and shake until blended Pour
over salad.
