AVOCADO AND BACON SALAD

( Serves 4-6)

INGREDIENTS:
  • ripe avocado pears.
  • 1 small melon , balled or cubed
  • 2 oranges
  • 4 rashes back bacon , cooked until crisp and chopped
  • 4 spring onions , chopped
  • 2 tbsp chopped chives
  • 50g/2oz roasted cashew nuts
  • freshly ground black pepper

For the dressing:

  • 3 tbsp olive oil
  • 2 tbsp orange juice
  • 2 cloves garlic , peeled and crushed
METHOD:
  • Halve avocados and remove stone and skin from each.
  • Cut flesh into cubes and mix with melon balls.
  • Remove peel and pith from both oranges and divide fruit into segments.
  • Mix pieces into avocados and melon and turn mixture into a serving dish.
  • Combine bacon, spring onions, chopped chives and cashew nuts and seasoning and scatter over salad.
  • Put dressing ingredients into jar, cover and shake until blended  Pour over salad.
