SALAD PLATTER

Serves 4-6

MIXED SALAD
INGREDIENTS:
  • 1 Cos Lettuce, finely shredded.

  • Red and Orange Peppers cut into thin strips.

  • 150g Emmenthal cheese or Cheddar cheese cut into thin strips.

  • 150g cooked ham, cut into strips

  • 150g cooked boneless skinless chicken meat cut into strips.

  • 150g cherry tomatoes cut in half

  • 150g carrots cut into strips

Balsamic Mustard Dressing:

  • For the dressing mix 4 tbsp extra-virgin olive oil, 3 tbsp best quality balsamic vinegar, 2 tbsp whole-grain mustard, ½ tbsp snipped chives, ½  tbsp finely chopped spring onions, salt and pepper.

METHOD:
  • Arrange the lettuce on a serving platter then top with all of the ingredients in separate mounds.
  • If you taking on a picnic , wrap each ingredient in cling film and transport with ice packs to keep fresh
  • For the dressing simply  put all of the ingredients together in a screw top jar , replace the lid and shake until blended.
  • Chill until required.

Health Notes: 

Peppers are a great source of Vitamin C - for maximum benefit slice just before serving.

Be sure to remove all of the chicken skin to reduce calories. The meat provides low fat protein and the ham is also a good source of protein.
