Potatoes with Spring Onion and Dressing
Boil
new potatoes in their skins, then drain and toss with finely chopped
spring onions, fresh herbs and a Balsamic Mustard Dressing.
For
the dressing mix 4 tbsp extra-virgin olive oil, 3 tbsp best quality
balsamic vinegar, 2 tbsp whole-grain mustard, ½ tbsp snipped chives,
½ tbsp finely chopped spring onions, salt and pepper.
