GRILLED SALMON

GRILLED SALMON WITH HONEY MUSTARD SALAD

Serves 4

 

INGREDIENTS:
  • 250g pack Florette Catalan Salad.
  • 120g fillets fresh salmon.
  • 1 tbsp extra virgin olive oil.
  • juice of 1 lemon.
  • sea salt and freshly ground pepper.

Dressing

  • 2 tbsp vinaigrette.
  • 3 tbsp mayonnaise.
  • 2 tsp coarse grain mustard.
  • 2 tsp honey.
  • 2 tbsp cream or fromage frais.

To Serve

  • Cherry Tomatoes on the Vine.
  • A few sprigs of rocket or watercress.

 

METHOD:
  • Blend all the dressing ingredients together then mix into the Florette Catalan Salad. Season well and set aside.

 

  • Preheat the grill. Brush the salmon fillets with the olive oil, season and grill for 3 - 5 minutes each side until the flesh feels just firm when pressed.

 

  • Sprinkle with the lemon juice.

 

  • Spoon the salad in the centre of four plates and place a salmon fillet on top of each mound.

 

  • Garnish with the rocket or watercress and tomatoes.

A very simple, easy and quick way to produce a mouth watering and special meal.
