HAM AND SWEET POTATO SALAD

Serves 4

INGREDIENTS: METHOD:
  • 450g (1lb) sweet potatoes, peeled and cut into small pieces.
  • 115g (4oz.) cottage cheese.
  • 2 level tbsp. mayonnaise.
  • 1 level tbsp. Dijon mustard
  • ½ level tsp. caster sugar.
  • ½ level tsp. salt.
  • 6 tbsp. natural yoghurt.
  • 275g (10 oz.) cooked ham, cut into matchstick strips.
  • 225g (8 oz.) white cabbage, finely shredded.
  • Boil the sweet potatoes until just cooked, then drain thoroughly. Set aside and leave to cool.
  • Place the cottage cheese,mayonnaise,mustard,sugar salt and yoghurt in an electric blender and puree until smooth.
  • Pour the mixture into a large bowl.
  • Gently mix the sweet potatoes,ham and cabbage into the dressing, mix well and serve.
