TOMATO - BASIL BISCUITS

INGREDIENTS: METHOD:
  • 1 large fresh tomato, chopped and then pressed on a paper towel to absorb excess juice.
  • ¼ cup fresh basil, chopped.
  • 2 cups all-purpose flour.
  • 2 tsp. baking powder.
  • ½ tsp. salt.
  • ¼ cup butter, softened.
  • ¾ cup milk
  • pinch fresh ground pepper.
  • Combine tomato and basil together.
  • In separate bowl combine flour, baking powder and salt.
  • Add butter and milk and mix well.
  • Add tomato-basil mixture and a pinch of pepper and mix well.
  • Drop tablespoonfuls onto a greased baking sheet.
  • Bake for 10 minutes at 400 degrees or until golden brown.

Unusual and different but these biscuits are wonderful. Make plenty because they will go fast.
