MIXED GRAIN PILAU

INGREDIENTS:
  • 2 tbsp vegetable oil.
  • 1 clove garlic, crushed.
  • 1 red pepper, sliced.
  • 1 onion, sliced.
  • 1 teaspoon mixed spice.
  • 2 courgettes, chopped.
  • ½ pound (225g) mixed, cooked grains e.g. rice, millet, whole-wheat berries).
  • Seasoning to taste.
  • 1 oz.(30g) raisins.
  • 2 oz.(55g) brazil nuts, coarsely chopped.
  • Chives to garnish.

METHOD:

  • Heat the vegetable oil in a pan and gently fry the crushed garlic with the sliced pepper and onion for 5 - 10 minutes to soften. Add the spice and cook one minute longer.

  • Stir in the courgettes and continue cooking for 5 minutes.

  • Add the cooked grains ( with just a tiny drop of water if very dry). Heat thoroughly over a low heat, taking care not to burn. Season to taste. Add the raisins.

  • Sprinkle the Pilau with chopped nuts and garnish with chopped chives.


.Serve with: A Spinach Salad sprinkled with chopped hard-boiled eggs or cubes of tofu for extra protein.

This is an ideal recipe for when you have a variety of left over grains to use up.
