INGREDIENTS:

tbsp vegetable oil.
- 1
clove garlic, crushed.
- 1
red pepper, sliced.
- 1
onion, sliced.
- 1
teaspoon mixed spice.
- 2
courgettes, chopped.
- ½
pound (225g) mixed, cooked grains e.g. rice, millet,
whole-wheat berries).
- Seasoning
to taste.
- 1
oz.(30g) raisins.
- 2
oz.(55g) brazil nuts, coarsely chopped.
- Chives
to garnish.

METHOD:

Heat
the vegetable oil in a pan and gently fry the crushed
garlic with the sliced pepper and onion for 5 - 10
minutes to soften. Add the spice and cook one minute
longer.

Stir
in the courgettes and continue cooking for 5 minutes.

Add
the cooked grains ( with just a tiny drop of water
if very dry). Heat thoroughly over a low heat, taking
care not to burn. Season to taste. Add the raisins.

Sprinkle
the Pilau with chopped nuts and garnish with chopped
chives.
