PIZZA WITH TOFU
 
INGREDIENTS:
  • ˝ pound (225g) pizza dough of your choice.

FOR THE TOPPING:

  • ˝ pound (225g) fresh spinach or frozen equivalent.
  • 2 tbsp vegetable oil.
  • 1 onion, sliced.
  • 6 oz. (170g) Tofu.
  • Seasoning to taste.
  • Soya Sauce to taste.
  • 2 oz. (55g) roasted sunflower seeds.

 

 

 

METHOD:

  • Prepare the pizza dough according to instructions

  • Wash the spinach, put it wet into a pan, cover, and steam for 10-15 minutes or until just cooked. Drain well and chop coarsely, then set aside.

  • Heat the oil in a pan and sauté the onion until it begins to colour. Drain the tofu and add to the onion, mashing it well with a fork or wooden spoon. Cook a few minutes longer.

  • Add the spinach, seasoning and Soya sauce, stir and cook a little longer.

  • Divide the dough and roll out to make four small circles. Share the topping between them, spreading it to the edge of each one. Sprinkle with seeds.

  • Bake at 400F/200C,Gas 6, for 20 minutes or until the dough is cooked.

 


Serve with: Fresh whole meal bread and a tomato and onion salad.
