INGREDIENTS:

pound (225g) pizza dough of your choice.
FOR
THE TOPPING:
- ˝
pound (225g) fresh spinach or frozen equivalent.
- 2
tbsp vegetable oil.
- 1
onion, sliced.
- 6
oz. (170g) Tofu.
- Seasoning
to taste.
- Soya
Sauce to taste.
- 2
oz. (55g) roasted sunflower seeds.

METHOD:

Prepare
the pizza dough according to instructions

Wash
the spinach, put it wet into a pan, cover, and steam
for 10-15 minutes or until just cooked. Drain well
and chop coarsely, then set aside.

Heat
the oil in a pan and sauté the onion until it begins
to colour. Drain the tofu and add to the onion, mashing
it well with a fork or wooden spoon. Cook a few minutes
longer.

Add
the spinach, seasoning and Soya sauce, stir and cook
a little longer.

Divide
the dough and roll out to make four small circles.
Share the topping between them, spreading it to the
edge of each one. Sprinkle with seeds.

Bake
at 400F/200C,Gas 6, for 20 minutes or until the dough
is cooked.
